What's Cooking: Making Pasta

Have you ever eaten homemade noodles? Meltingly tender. Impossibly light. Richly satisfying. It’s hard to understand how simple ingredients like eggs and flour can combine into a dish that is at once both delicate and hearty.
In this two-hour class, learn how to mix, roll, and cut the dough to make pasta in your own kitchen. Class will begin by showing you how to use the Cuisinart food processer to blend the ingredients to the proper consistency. Move on to using the Imperia Pasta Roller to crank out thin sheets of pasta and cut them into wide tagliatelle – broad, flat noodles. See how to fill and twist the pasta sheet into plump tortellini filled with spinach and cheese.
Class will be a mixture of demonstration and hands-on action. Be ready to roll up your sleeves and come dressed to be in the kitchen. Students will each have a turn at running the pasta roller and cutting the tagliatelle. Participants will also have the chance to fill and fold the tortellini.
At the end of the evening, we will enjoy a taste of the tagliatelle served in a thick meat sauce, an authentic ragù bolognese, and the tortellini lightly dressed with butter and sage.
Class begins on Saturday evening, October 1, at 6:30 and will last for about two hours. The store closes at 6:00pm so we can get everything ready for you; doors will open at 6:15. As with all of our events, this class will be BYOB. Bring bottles of your favorite vintages, and we will provide the glasses and the openers.
